Learn to preserve food at your high-altitude home

Please join the CSU Extension Master Food Safety Advisors (MFSA) of Archuleta County to learn all of the latest recommendations on safely preserving food at home.

The MFSAs will offer a series of classes beginning Jan. 29:

• Jan. 29 at 1 p.m. or 6 p.m., jams and jellies.

• Feb. 26 at 1 p.m. or 6 p.m., whole canned fruit.

• March 26 at 1 p.m. or 6 p.m., pickling, freezing and drying.

• April 23 at 1 p.m. or 6 p.m., tomatoes and salsa.

• Sept. 26 from 9 a.m. to 4 p.m., vegetables and pressure canning.

• Oct. 24 from 9 a.m. to 4 p.m., apples.

The spring classes are three-hour classes and the fee is $10 if preregistered in advance of class date. The fall classes are six-hour classes and the fee is $20 if preregistered in advance of class date. You can save money by prepaying $70 for all six classes.

Because we all live at high altitude, there are things that we must do to ensure that our preserved food is safe. These classes will be great for beginners and advanced preservers. If you are an experienced preserver, I guarantee that you will learn some things that you are doing right and some things that you are doing wrong. When we preserve food incorrectly, we open the window for a food-borne illness.
