Peach Muffins

2 2/3 cup flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup buttermilk
1/3 cup butter or margarine (melted)
2 eggs, slightly beaten
1 teaspoon vanilla
3 medium peaches, skinned and diced
Preheat oven to 400 degrees. Line muffin pan with paper cupcake liners. In a large bowl, combine flour, sugar, baking powder and salt. Stir until all ingredients are well mixed. In a separate bowl, whisk together buttermilk, eggs, butter, and vanilla. Add peaches.
Using a large spoon, slowly fold liquid ingredients into the dry mix, stirring until all is moist, do not over mix. Spoon batter evenly into 12 muffin cups. Bake 20-25 minutes.
