Bacon and Fruit Ice Cream Sundae

2 cups cherries, pitted and sliced

1 fresh pineapple, peeled and diced medium

1 tablespoon chipotle puree

1 cup brown sugar

2 pints vanilla ice cream

1 cup applewood smoked bacon, diced

8 soft caramels, unwrapped
