    Colorado Pinto Bean, Corn and Bacon Salsa

    5 ears sweet corn

    4 tablespoons butter, melted

    1 yellow onion

    3 red jalapeño peppers

    12 slices bacon, cooked, cooled and chopped

    1 tablespoon garlic, pureed

    1/2 cup pinto beans, soaked, rinsed and par cooked

    1/2 cup black beans, rinsed

    1 cup tomato sauce

    2 teaspoons ground cumin

    1 teaspoon chili powder

    4 tablespoons cilantro, chopped, no stems


    Ground black pepper

    Lime juice
